A Very Indulgent Recipe: Banoffee and Marshmallow Cake
So here we go – one of the most indulgent recipes you could possibly imagine – follow the instructions below to make your very own banoffee and marshmallow cake! It’s not very good for you, but you have to treat yourself once in a while!
Time: 50 minutes cooking time, 30 minutes preparation time
Ingredients
3 bananas, 165g butter, 165g brown sugar, 325g self raising flour, 4 eggs, 4 tablespoons of milk, 1 tablespoon of baking powder, 1 tablespoon of cinnamon, 300ml double cream, 50g marshmallows, 450g jar of caramel
Process
1. In a bowl mix together the flour, cinnamon and baking powder. Then, in another bowl add the sugar to the butter and whisk together until you have a smooth mixture.
2. Start cracking the eggs into the butter and sugar paste adding a tablespoon of the flour / cimmamon / baking powder mixture with each egg. Once all the eggs are well mixed in add the milk and the remaining flour mixture and stir together well.
3. Create a banana paste. Do this by taking two of the bananas and putting them in a bowl. The use a potato masher to mash the bananas, or if you prefer use an electric mixer. Add this banana paste to the other mixture and again, mix together well.
4. Grease the bottom of a 21cm cake tin. Spoon the cake mixture in evenly over the surface and put in the oven. Bake for around 45 minutes, until a fork inserted into the cake (in the middle somewhere) comes out clean of cake mixture.
5. When the cake is baked well enough turn the oven off and leave it to stand. Once most of the heat has gone take it out the tin and leave to stand on a wire cake rack to cool fully.
6. Now for the filling. Whip the cream in a bowl until it becomes quite stiff. Then cut the final banana and the marshmallows into small pieces and add them to the cream. Mix the whole lot up really well until you have a consistent banana/marshmallow filling.
7. Very close to the finishing line now. Take a long serrated knife and cut the cake into three equally sized layers. In each layer create a filling of caramel and cream, so you end up with a Big Mac style cake – three slices of bread (the sponge) and two burgers (the filling). If you have any remaining caramel and cream use this on top, and then decorate the top with anything you have left over – marshmallows, or crushed chocolate. Finally serve to some very happy diners!
