Barbeque Pork Ribs

This BBQ Pork Rib recipe will satisfy your family and friends when you serve it up for your summertime BBQs. Ingredients: 4 lbs. of thick and meaty pork belly ribs, BBQ sauce (smoked variety), Red wine, Ketchup, Worcestershire sauce, Honey, Rosemary fresh leaves, Oregano flakes, Salt & pepper to taste, Corn starch or flour

No specific ingredient quantities are required for this recipe. You will modify them to your preference. (The more, the better!) Four pounds of meat feeds four hungry people, unless of course you’re inviting me, then you’ll need to double that!

Preparing the Ribs

Begin by marinating the ribs, putting them relatively packed into a plastic bag or non-metal container. Sprinkle them with lots of fresh Rosemary leaves (dried rosemary leaves may be used however the taste won’t be the same), Oregano flakes and pepper (no salt at this time), then liberally cover them with the honey, BBQ sauce, ketchup and Worcestershire sauce.

Turn the rib over and duplicate the guidelines above then you should pour red wine in the corners of the container for the ribs to soak in it. The wine has to cover the ribs and once this is achieved put the container in the fridge overnight so that the ribs could marinate. Continue flipping the ribs to make sure that both sides are covered.

Organize the charcoal. You’ll need plenty of it mainly because pork requires more time than beef, and also the ribs must be cooked on the upper rack of the grill whenever possible.

Procedure for Cooking

Sprinkle salt over the meat as soon as it is seared. You’ll need to do this one side at a time. When this is complete move the ribs to the top side of the grill so that it could keep on cooking.

You will have to turn them a number of times in an effort to cook the ribs without burning. Check how well they’re done by cutting one of the ribs in the thickest part and examining the colour. If you like the meat moist then they will be prepared when the interior flesh has a very light pink colour without blood at all, but this is up to you, for a really well done rib, but drier, the meat should be almost totally white inside.

Pour honey over the ribs and allow it to melt about five minutes before completion for a terrific honey BBQ flavor.

SAUCE:

Whilst the ribs are cooking put all the marinade juice into a skillet (it can be sieved if you want) and add 2 or 3 teaspoons of cornstarch or flour to thicken the sauce. Bring it to boil, and then simmer for a few minutes. Check the thickness of this sauce and add the salt to your liking. If you want it thicker, add more cornstarch dissolved in any cold liquid (water or wine, etc) in order to avoid the forming of any lumps.

Important: If you don’t want your sauce to taste like cornstarch you need to give it time to cook for about ten minutes in the sauce. Lastly, serve the ribs with the sauce in a separate bowl, add some good company with a glass or two of wine and enjoy this BBQ pork ribs recipe on a cozy soothing summer’s evening!
