Enchilada – The History And Recipes

Much like tequila, Mexico is also known for one of the most loved foods in the world, known for its wonderful taste and varying recipes. The enchilada originated from this South American nation and was also a staple meal found in Nicaragua, Guatemala and Honduras. A variation made of puff pastry and potato cubes soaked in Tabasco sauce was made in the bakeries of Costa Rica.

It was a meal that was well known in Guatemala, Honduras and Nicaragua. In Costa Rica, however, the enchilada is a small dish made of puff pastry filled with potato cubes that have been spiced with Tabasco sauce. The common fillings of the modern enchilada include beef, chicken, vegetable, cheese, seafood or a combination of two or more of these. The enchilada recipes have risen in number and are proving to be a favorite with all exotic food lovers the world over.

Enchiladas are embraced for their ability to cater for every belief and lifestyle. One can either purchase pre-packaged tortillas or make them from scratch. All one will need to do is get about 2 cups of flour, a little vegetable oil, salt and baking powder as well as some lukewarm milk. One makes dough from all of these by first mixing the dry ingredients and then adding the milk mixed with oil and salt in bits. Once it has reached the desired consistency, it is kneaded for about 2 minutes and let to stand or ‘rest’. After some time, one can cut the dough into equal balls then let to rest a little more before being rolled into inch thick tortillas which can then be cooked in a skillet for a few minutes. When the enchiladas are nicely filled and covered with the desired filling and sauce and some cheese, they are usually placed in the oven at 190 degrees to bake for about 20 minutes before being ready.

Many dishes tend to alienate vegetarians, but not enchilada recipes. One can make spinach enchiladas where the spinach is first cooked with some garlic, green onions, ricotta cheese, butter, Monterey Jack cheese and sour cream before being scooped by the cup and placed in the ready tortillas. Once this is done, the remaining Monterey Jack and the desired sauce are poured over the enchiladas. Enchilada comes in casseroles which are made of layers of filling before being baked.

For those who are meat lovers, one can use chicken, beef and seafood in the casserole. Enchiladas and enchilada casseroles make for a perfect family meal or party dish.
