FantasticClimate At The Weekend Was A Life Saver
We are seriously having an Indian summer. Much argued over in boozers and papers during August and early September it has arrived with spectacular results this weekend (well, Sunday at least, Saturday was somewhat drab) but here we are on Monday and it remains glorious. So, that being the position, did we all congregate around the charcoal grills?
We did. Well, we had to really as our kitchen is being rebuilt and the fellas are working at full pace to get it complete, but it’s a huge job and they are now in the second week. They may be ending tomorrow, possibly, but in the meantime we got through the weekend continuing to camp out in the dining room. Our parameters for feeding on processed meals was exhausted by Friday so on Sunday, out came the Weber gas grills and we had some proper food.
It was a fairly fine serving too, quite brave to cook over either gas or charcoal grills, I made grilled lemon sole with a champagne sauce and sauteed potatoes. The sauce is pleasantly simple but tasty, firstly you melt three tablespoons of butter in a pan then whisk in three tablespoons of plain flour. After it has changed into a heavy paste, pour chicken stock, about 3 cups worth and heat it to the boil, at which point, turn down the heat and put in around 3 cups of champagne (cheap bubbly in our case but not to worry) and bring back to the boil and leave it to simmer for approximately 10 minutes. Finally, add in around three cups of double cream, go back to the boil, whisk thoroughly and season with salt and pepper. Change amounts as necessary, remember to try as you go and you ought to be left with a thick sauce ready for drizzling over the fish. It is wonderful. And, honestly, it’s not very easy to attempt on a Weber bbq or any kind of barbeque to be truthful whether gas or charcoal grills. What I needed to do was to move it about over the heat or remove it totally and try to find the best temperature.
Quite apart from the handiness of the conditions giving us an opportunity to prepare some real food with the kitchen unserviceable, having a last chance use the Weber bbq is a genuine treat to get one last taste of summer before we get into the depths of Autumn and begin the countdown to the festival season of the clocks turning back, Halloween, Guy Fawkes night, Remembrance Sunday and then the run in to Christmas and the New Year. These are not really geared to using a Weber gas grills unless we have a long hot autumn which would be positively dangerous.
Myself I’m definitely confident that we will be expecting another very chilly winter. I seem to be the only person in the world to realise that climate patterns tend to be for a double year cycle. If you think back to the hottest summers, they tend to come in two’s and so having had an amazing winter with all the snow and ice this year that we used to experience in the days of my youth, I’m pretty willing to wager some of your cash that a repeat won’t be far behind. But because I work at home, I shall worry not even a little. Enjoy!
