Healthy Summer Desserts

Here are some quick and healthy desserts made with fresh fruit. The great taste of summer fruit makes for easy and delicious desserts that can be put together very quickly with just a few ingredients. Try these easy dessert recipes for a simple and flavorful end to a meal or for a quick and easy snack that is both naturally healthy and sweet.

Each recipe makes 2 to 3 servings.

Mixed Berry Treat: You will need, 1 cup blueberries, 1 cup raspberries, 1 cup strawberries (cut into small chunks), one-half cup (or to desired creaminess) lemon yogurt, and one-half cup low-fat granola. Directions: In a mixing bowl combine the berries with the yogurt and toss well. To serve: Here’s a fun dessert for kids – scoop berry mixture into ice cream cones and top each cone with a sprinkling of granola.

Strawberry Salad: You will need, 2 cups strawberries (cut into medium sized pieces), 2 cups mango (cut into medium sized pieces), 2 cups seedless red or green grapes (cut each grape in half ), 4 oz low-fat cream cheese (4 oz block cut into cubes – make sure the cream cheese is cold so cutting and preparation will work best). Directions: In a mixing bowl, combine all the ingredients and toss gently. You don’t want to break up the cream cheese. To serve: Serve fruit salad in clear bowls, drizzled with an all natural chocolate sauce and shaved white chocolate on top.

Raspberry Pear Parfait: You will need, one and a half cups raspberries, 1 large pear (remove core and dice), 2 cups low-fat vanilla yogurt, and one-half cup mini chocolate chips. To serve: Take two parfait glasses or two wine glasses and place a layer of raspberries on the bottom of each glass, then a layer of yogurt on top of the raspberries then sprinkle on some chocolate chips. Next place a layer of pear pieces in each glass, then yogurt, then chocolate chips. Layer again with the raspberries and continue layering until you have used up the ingredients, finishing with a sprinkling of chocolate chips on top of each parfait.
