Grilling in the summertime is an activity we usually associate with burgers, steaks, and hot dogs, but those are not the only options, and it is not a good idea to limit yourself to them. Peppers, both sweet and hot, onions and their relatives, summer squash of every kind and all kinds of other veggies are fantastic on the grill. Carrots, potatoes, radishes, beets, turnips, and sweet potatoes are all good, as long as you are patient and give them long enough to cook, too. Many of them become sweet and rich tasting – experiment with your grilled veggies to find out what each of them does.
