How To Make Ice Cream In A Vitamix

Making sorbets and ice cream in a Vitamix can be very difficult. Out of all of the recipes, this can be some of the hardest to do. The reason for this is that everyone has different ice. The trickiest part is to get the ice to water ratio correct. If you have too much water, then you’ll have runny ice cream and sorbet. However if you have more ice than you should, it can get so thick that it will cause the blender’s blades to slow down, causing the fan to slow down, and causing your machine’s motor to overheat, causing the machine to shut down.

A basic rule of thumb on ice cream or sorbets is for every 1 cup of liquid, you should use about 3 cups of ice, frozen fruit, or a combination thereof. Or better stated, to create a thick frozen dessert you need to have “roughly” about 25% liquid to 75% frozen. With regards to ice, as long as the ice fits through the whole in the lid it is safe for the machine!

Using the tamper tool is an important concept when making frozen desserts in the Vitamix. You’ll want to use this tamper tool while the dessert is blending in order to reduce air and frozen material pockets, and to create more consistent mixing. Something that occasionally happens is that the Vitamix creates an air pocket because it’s blended the frozen material very fast. It’s possible that you will see the bottom of the mixture being very thick and it may not look like the machine’s doing much, but it’s blending everything down to a great creamy state.

The natural rotation of most contents in the Vita-mix is out from the bottom, up the sides, across the top, and then back down towards the center again to the blades, and then the journey begins again. The downside to not using the tamper is that the frozen dessert ultimately becomes too thin from this duration of friction. However, by using the tamper, and constantly moving the tamper up and down and also left and right in a continuous motion while fully extended into the container will allow for a better mixture and movement of any thick air or frozen pockets and will allow the contents to rotate quicker, therefore allowing for less time on high speed and keeping your frozen dessert thick and creamy!
