Meals Cooked Using Spacemaker Toasters Are Wonderful

By now you know by reading any of my articles that my mother and grandmother were incredible cooks. Our grandmother lives just three hours away from ours. We frequently visit her. She knew what we liked and she would cook it for us whenever we were at her house for gatherings. Grandma named her recipe City Chicken. I am imparting this to all for the reason that this blessing of talent and food is worthy of praise and also for you to have the pleasure of savoring the meal from the best cook.

On Sundays, Grandma would serve us City Chicken for lunch. During Sunday mornings, we were awakened to the sweet scent of something roasted in the kitchen. We knew that grandmother loved us so much with the way that she cooked for us, giving her all just so that we can have the best. We knew that Granny was cooking our favorite, the City Chicken! Grandma would be cooking, knowing there are very eager mouths waiting, the whole time while the rest of the family were out in the garden, with me and my cousins playing and climbing trees.

As soon as Granny bellowed from the kitchen door that our meal is served, my cousins and I would run off to the dining area at once. Not only did we enjoy the talking, the sharing and gathering, all the family members most specially had the pleasure of savoring Grandma’s delicious cooking. The 50′s-60′s metal table in the dining table would have its top displayed with Grandma’s City Chicken, macaroni and cheese, snow peas with small new potatoes in cream sauce, homemade bread, salad and mashed potatoes. And in the midst of all that food, there was the love and bond of family. Even if we ate on dishes that didn’t complement our spoons, forks and even our glasses (the blue one’s my favorite), or the cloth on the table was already discolored, the important thing was we were having fun as a family. All that mattered was the love of the family enjoyed with appetizing treats and great laughs.

I don’t mind if the City Chicken consumes a lot of time in the making because it’s all worth the effort and wait! We had the beef meat, pork meat and veal. All were of the same quantity and cut into cubes, then later were run through a wooden skewer in alternating positions. Each spear of meat was added with salt and pepper to taste, doused into a batter of egg and milk, coated with crackers that were finely crushed, and fried until the color turns slightly brown. The fried skewers were then loaded into a sealed roaster and inserted into the oven until all the meat was cooked inside and out. They usually fell off from the sticks. She also tried cooking the City Chicken on the electric roaster oven later on and the result was still very scrumptious. Oh – and did I mention her macaroni and cheese? I know now that it wasn’t the healthiest dish on the table, but next to the City Chicken the best! She made her macaroni and cheese with cream, something called hoop cheese (had to be this kind of cheese or it just didn’t taste right), a little bacon grease, all mixed together and then topped with more cheese. What I loved the most about it was the slightly burnt edges that was crunchy!

Conventional oven or roaster oven, either way after it is taken out of the oven, this meal still tastes the same even though cooking it consumes a lot of time. My grandmother’s cooking had a distinct taste that only she knows how. Words cannot really express what it was really that grandmother had put in her cooking that made her the best. Grandma had a lot of it!
