Pork Chop Recipe
One does not have to be a trained cook to cook an incredible dish. Even the simplest dish like a pork chop, could put on its “gourmet clothes” if one knows the way to do it.
You might discover lots of pork chop recipes in as many cookbooks, but the recipe in this article is the best of the lot.
The given recipe serves 4 people – You can choose to divide it into 2 parts if there are only two of you unless you guys are really hungry
4 1-in thick pork pieces two big sweet onions, Vidalia preferred, sliced very thin 1 cup heavy cream Salt and pepper
Four medium baking potatoes (If you are not used to cooking you can obtain packaged mashed potatoes and put in some milk & butter to get them up to a decent standard) butter and milk for the potatoes if you prefer real mashed potatoes.
Spinach, greens or green veggie according to taste.
Trim off a few slivers of fat from the chops leaving the rest on., Put the slivers in a heavy skillet, large enough to hold the chops and render over low flame till they give up some fat.
Keep the flame low, add the chops and add the sliced onions and proceed to smother the mix. Add pepper & salt and now cover up the skillet and cook for a couple of hours.
Close to one hour ahead of serving time start thinking about peeling the potatoes and getting them ready to mash. Ditto with the green vegetable. This isn’t a time-sensitive recipe so you can loosen up.
After the two hours has elapsed, uncover the chops and place them on a 200 deg oven.
Increase heat up to medium high, pour in the cream and reduce the mix until it has a sauce-like texture. Don’t make it very thick.
Place a chop on the plates along with a generous offering of mashed potatoes. Dollop the onion mix over the potatoes & meat and offer the greens on the side, perhaps with some vinegar & pepper speckled on them.
