Enchiladas- A Mexican Gift

The term enchilada has a Spanish twist to it, and thats probably because the dish has a Mexican origin. What started out as small fish rolled in corn tortillas has evolved and turned out to be a staple for many Mexican and American families as well. As with any foods that have a semi-traditional origin, different cultures take the recipes in and add their own unique twist to come up with different recipes. And the story is not so different for the enchiladas. When enchiladas were first made, things were kept simple- corn tortillas with some chili sauce. But things have changed, with different sauces being used with the recipe, and different kinds of fillings being added. For instance, enchiladas suizas, which from their naming suggest a Swiss origin, trade the chili sauce for a cream-based sauce such as bchamel. When it comes to the fillings, individual tastes matter. But the most observed trend is with beans or beef. Enfrijoladas are enchiladas that have a topping of refried beans instead of chilli sauce.
