Many people loose confidence in cooking without their cutting board being available. They just feel lost and do not know how to proceed.
Come to think of it, because of the cutting board, we do not use the kitchen counter to cut vegetables and damage the surface. Moreover the cutting board is always clean of dirt and germs.
Quite a few people do not have the patience to use the cutting board and end up using kitchen counters to cut vegetables and meat with the result that the entire kitchen stinks, the counter top has become a dirty and filthy place full of scratches and grime and needs to be replaced.
Obviously one cannot keep changing the kitchen counter top all the time for it can be very expensive and time consuming. It would be cheaper and better if one adopts the habit of using cutting board. But then choose which one you want from between plastic and wooden boards.
Which type of cutting board is purely a personal choice of the individual who uses it. Professional chefs of course always prefer the wooden boards and they are able to maintain it too.
Many people like glass boards for they think it looks classy. But what they do not know is that the glass surface is harder than the other boards and one does not feel comfortable in using it. Wooden boards need to be washed, dried and sealed to avoid warping and cracking. Plastic boards on the other hand do not call for any maintenance except of course daily wash with soap water .
The dangers of using a board with very hard surface is that you will end up damaging the knives very often. They loose their strength in no time and will not slice and dice properly.
You can buy any board that you like but make sure that you use a bleach to clean it every day and disinfect it after use. It does not call for buying any bleach from the market. You can make a solution of vinegar with water at home and it works as bleach. Scrub, wash and then rinse the board in this solution and you can be rest assured that the board is disinfected.
