How to Grill and Top Your Pizzas

Make the dough for your pizzas using the recipe of your choice and set it aside while you prepare the toppings. Keep in mind that the toppings you use for grilled pizzas may need to be a bit different than if you were baking the pies in the oven.

For the best results when grilling pizzas, par-bake or partially cook the dough first before adding any of your toppings. Grilling the dough for a few minutes, then removing it from the heat and flipping it over before adding the toppings to the uncooked side will prevent your pizzas from burning.

The exact amount of time it will take to grill your pizzas will depend on a few variables such as the size of the pizzas and how hot the grill is. Then, top your grilled pizza with vegetables that are also partially cooked on the grill first to reduce their water content. Also add a few toasted nuts or seeds, some fresh spices and seasonings, and of course, your favorite cheeses such as gorgonzola, mozzarella, parmesan, and provolone.

Some cooks choose to coat the grates of their grills with vegetable oil or with a few passes of a non-stick cooking spray before adding their dough. This is usually a personal choice as the dough should be easy to remove once it has cooked long enough by simply pulling it with your fingers or sliding a spatula underneath and lifting. Do not panic if the dough starts to droop down through the grate as it will harden quickly while cooking.

After the pizzas have cooked, close the lid and turn the heat off to let the toppings finish cooking without running the risk of burning the bottom of the crust.
