You Can Age Cheese in A Humidor

If you have a cigar humidor, you can do a number of things with it. One of life’s finest pleasures, other than a good smoke, is a fine aged cheese. However, aged cheese is more expensive, but you can do the aging process at home, right in your humidor. How do you age cheese in a humidor?

Next, you need to clean the unit. Whether you are purchasing a new unit or are using an older one, humidors can contain things like mold and bacteria that you do not want in your cheese. Cleaning humidors is pretty easy – just use a little sterile water and it will do the trick. The entire point is that you need to get rid of any bacteria that might taint the cheese’s flavor – the bacteria in the cheese should be sufficient for the job. You also need to make sure that you have a good seal and a good hygrometer. Just like aging cigars, temperature and humidity control are important things in aging cheese.

Next on your list, you should line the bottom of your unit with clear plastic wrap or some other plastic lining. If you do not use plastic wrap – like Saran Wrap – make sure that you do use food grade plastic, or you risk adding unwanted chemical tastes to the cheese. Place a damp cloth on the plastic wrap, but make sure that it does not contact the sides of the unit. Now, you need to add your humidifier to the unit – make sure that you have plenty of water in it and make sure that your thermometer and hygrometer are installed properly. Let the unit sit for about three days with the lid closed.

After about three days, check the thermometer and the hygrometer. Unlike cigars, you want a humidity level of about 80 to 90% and a temperature of no more than 58 degrees. When those conditions have been met, put your cheese in an open plastic container and then place that in the unit. Close the lid on your unit and let the cheese age.

Check the humidity and temperature readings after about three days. If all is well, then place your cheese in a plastic container (no lid) and then place that in your humidor. Close the lid and let the aging process get started. You do not have to maintain a low temperature when the cheese is inside the humidor, but the humidity levels need to remain between 80 and 90%. The longer you age your cheese, the sharper its aroma and flavor will become. You can also adjust the temperature to achieve different tastes.
